The English name pistachio is derived from “Pisteh”, which is a Persian name and known as Green Gold among Iranian. Pistachio is one of the world’s oldest nuts, being grown in the Middle East for thousands of years. Like all nuts, pistachios are rich in beneficial nutrients. However, pistachios have some unique properties that set them apart. Their versatility means that you can eat pistachios alone as a snack, on top of a salad, mixed with dried fruits in trail mix, in baked goods or as a crunchy coating for fish or meat. Pistachios are a rich Protein Source and mineral phosphorus. They have a healthy ratio of beneficial fatty acids and contain beneficial antioxidants and vitamin B6. Iranian pistachios have a world-famous taste that is unrivalled. Iranian pistachios include many local names and each name represents a region shape or quality type. However according to external shapes and sizes there are classified in main groups: Round (Fandoghi and Jumbo or Kalleqouchi), Long (Akbari, Ahmadaghaee and Badami).
Whole pistachio Kernel and green peeled pistachio Kernel are also two important groups.

Whole Pistachio Kernel

Pistachio kernel with reddish appearance normally comes from any pistachios types of closed and open shell. It is used as a food ingredient in different industries such as bakery products, chocolate and sweet industry, also cooking.

Green Peeled Pistachio Kernel

Green Peeled kernel is known as the most expensive among all types of kernels and as luxury food ingredient, which is used in various industries such as pastries, chocolate, ice cream, sausages and ham. It is classified according to the percentage of green color of the kernel to dark green, green, greenish, yellow and light yellow.

Fandoghi Pistachios

Fandoghi belongs to the round type of Iranian Pistachio and is small in shape. It is the most widely available pistachio variety. The local name is derived from the shape of this type which looks like hazelnut.

Jumbo or Kalleqouchi Pistachios

Kalleqouchi belongs to the round type of Iranian Pistachio and is large in shape. The local name is derived from the shape of this type which looks like rams head.
Size: 20/22 – 22/24- 24/26.

Akbari Pistachio

Akbari belongs to the long type of Iranian Pistachio and is longest in shape. It is known as a super long Pistachio and has the highest economic value among other varieties. The height of head and end of Akbari pistachio is nearly the same. Akbari is also the easiest to open pistachio variety.

Ahmadaghaee Pistachio

Ahmadaghaee belongs to the long type of Iranian Pistachio but the length of each piece is different. This rather long Pistachio also has the whitest shell and different taste. Ahmadaghaee is the newest commercial variety and the most favorable type of Pistachio in eastern Asia in particular China, India and Greece.
Size: 22/24 – 24/26 – 26/28.

Badami Pistachio

Badami belongs to the long type of Iranian Pistachio but it is shorter than Ahmadaghaee Pistachio and often confused with it. Badami’s shell is naturally stained and kind of dark in comparison with Ahmadaghaee and Badami’s kernel color isn’t as pink as Ahmadaghaee kernel.
