The English name pistachio is derived from “Pisteh”, which is a Persian name and known as Green Gold among Iranian. Pistachio is one of the world’s oldest nuts, being grown in the Middle East for thousands of years. Like all nuts, pistachios are rich in beneficial nutrients. However, pistachios have some unique properties that set them apart. Their versatility means that you can eat pistachios alone as a snack, on top of a salad, mixed with dried fruits in trail mix, in baked goods or as a crunchy coating for fish or meat. Pistachios are a rich Protein Source and mineral phosphorus. They have a healthy ratio of beneficial fatty acids and contain beneficial antioxidants and vitamin B6. Iranian pistachios have a world-famous taste that is unrivalled. Iranian pistachios include many local names and each name represents a region shape or quality type. However according to external shapes and sizes there are classified in main groups: Round (Fandoghi and Jumbo or Kalleqouchi), Long (Akbari, Ahmadaghaee and Badami).
